What origin coordinates are for
A capture is a cloud of measurements with no opinion about where on earth it sits. Project origin coordinates give it one — a real-world position and orientation, so the model lines up with survey data, with a site plan, and with anything else georeferenced.
The model has not changed in 5.0. If you set these up in 4.0, the same values mean the same things. What moved is where the controls live.
Setting them when the project is created
In the New Project wizard, at the Location step. Turn on Use Project Origin Coordinates and the rest of the step appears.

Changing them afterwards
Configuration › Properties › Project Location. Every value above can be edited there after the project exists.
The one thing to decide before you create the project
The toggle is not offered again after creation. Once a project has origin coordinates you can change them — a different EPSG, a corrected bearing, a new origin point — but you cannot switch them off.
So the decision to georeference a project is made at creation and is one-way. Turning it on later is not on this page; turning it off later is not anywhere.
