What the page is
Activity is the first entry under Admin in the Project Admin Center's sidebar. It is the project's log: one line per thing that happened, newest first, grouped under a date heading.
Each entry names who, what and to what — <person> Finished processing capture 3D Map [02:57 PM] — with the time beneath it and a small type chip (Capture). The object is a link: the capture name opens the capture.
Finding one entry
Three filters sit above the log beside a search box: All types, Anyone, All time. Anyone opens a checklist of the project's members with Select All; pick people and Apply. All types and All time narrow by event type and by date range the same way.
The search box searches the entry text, so a capture name or a person's name both work.
The four filters combine with AND. Narrowing by type, by text, by date range and by author all apply at once, so an entry has to satisfy every filter you have set to appear.
What gets recorded
The All types list is the answer to “what will I find in here”. Today it holds twelve kinds of activity:

This is a project activity record, not an audit log, and the difference is not pedantry. An audit log promises two things — that entries are kept for a stated period, and that they cannot be altered. This page promises neither: how long entries are retained has not been decided. So it is the right place to answer “what happened to this project last week”, and the wrong thing to rely on for a compliance or dispute record.
